Nabe ryouri, Hot pot of Pork and vegetables

Nabe is a pan, and ryouri means a dish in Japanese. So Nabe ryouri means that we cook various things in a hot pot in Japanese. It is popular in winter. I like it because it gives you warm and cozy. Japanese usually place the hot pot in the middle of the table. We sit around the table. We chat as we cook. Ingredients for 2 servings 600g Hakusai (Nappa Cabbage) 300g Carrots 300g Onions 350g Thin slice pork 3 Tablespoon Dashi powder* 1 Tablespoon Mirin 400ml Water Directions Chop Hakusai , and slice carrots and onions Put all of vegitables and Pork in a Nabe (a pan), and add Water, Mirin and Dashi Powder Put the pan over the heat, and bring it to a boil Reduce the heat to simmer about 20 minutes Eat with Ponzu soy sauce as dipping Dashi Power is refereed as "Hondashi" at the store.

Salmon with Ponzu soy sauce

Ponzu soy sauce is a mix soy sauce with citrus fruits. It is referred as "Ponzu". Japanese use ponzu soy sauce as dipping sauce for cooking various things in a pot, Tofu, Sashimi, Salad dressing, broiled fish, dumpling and so on. My favorite way is to have Ponzu soy sauce with grated Daikon. It goes well with  even steak!!  Salmon with Ponzu soy sauce  Ingredients (for serving 2 ) 2 Salmon 15cm Daikon, make it grated Long green onions, cut in pieces 5g Butter 1 tablespoon Grated Garlic 3 tablespoon Ponzu soy sauce 1 tablespoon Sake Directions Seasons the salmon with  salt and pepper Heat oil in large skillet over the high heat, add the salmon Sprinkle sake over the Salmon Brown the salmon on one side, then turn over Reduce the heat, and add Butter and Grated Garlic Brown the Salmon, then remove it to a plate Add Ponzu soy sauce on a skillet, turn off the heat, and mix Ponzu soy sauce with Butter and garlic well on a warm skillet Arrange 1 Salmon on each p

Chicken with soy sauce and Lemon

I love soy sauce. It goes  well with everything to me. Chicken with soy sauce and lemon Ingredients 350g Chicken 1 Carrot 2 tablespoon Dried basil Salt Pepper Sauce 3 tablespoon Soy sauce 1 teaspoon Sugar 2 tablespoon Lemon juice 1 tablespoon Olive oil Directions Cut chicken for small portion Cut carrot thinly slice In a large skillet over the medium heat, put carrot bottom and chicken on top Sprinkle dried basil, salt and pepper Add 300ml water and cover Steam about 5 minuets Meanwhile, in a small pot over the medium heat, add all of sauce ingredients Bring  the sauce to a boil, then reduce the heat to simmer till sugar is melted completely Serve the chicken and carrots with sauce

Yummy dipping sauce for Yakiniku (Yakiniku no tare)

I think many Japanese love Yakiniku. Yakiniku is like Korean BBQ. We cook thin slice of meat, seafood and vegetable. We usually do not marinate meat. So we need yummy dipping sauce. We call it " Yakiniku no tare". There are many dipping sauces are sold at the store. But they are not cheap... I finally found the home made yummy sauce recipe Ingredients (about serving for 4 ) 100cc Soy sauce 1 tablespoon Miso 3 tablespoon Sugar 1 tablespoon Grated garlic 2 teaspoon Grated ginger You could add followings as you wish.. Sake Mirin Hot pepper Directions Add all of ingredients Heat a sauce pan over medium heat Bring to a boil, then reduce the heat and simmer Add Sake or Mirin or Hot pepper to make a preferable flavor

Chicken breast with Daikon

In general, Daikon taste good in winter time. Ingredients 1 Chicken Breast 10cm Daikon A: Salt and Pepper A: 1tablespoon grated ginger Potato Starch B: 50cc Mentsuyu(noodle soup) B: 150cc water Directions Cut Daikon about 1cm thick, and boil until Daikon become transparent Cut chicken about 1cm Mix chicken with A in the container and put it in fridge for about 10 minutes Drench chicken in the Potato Starch to coat lightly In a large skillet over medium heat with olive oil, add chicken When chicken is browned, flip and cook other side Add Daikon until it become tender Add B Let it simmer gently until it become thicken

How to grow long green onions at home

Once you purchase long green onions at grocery store, you can grow them at home. It would be nice to have fresh long green onions all the time    Chopped long green onions are used as a seasoning in Japan. We call it Yakumi. Yakumi are the spices and herbal vegetables  that add flavor to dish.   Japanese enjoy chopped long green onions with Miso soup, Natto( fermentated beans), Hiyayakko( cold tofu), Zarusoba( cold buckwheat noodle) and more!!  Yakumi : Yaku means medicine & Me means flavor  For example, long green onions make you recover from fatigue and boost immune system How to grow long green onions at home  Things you need Small cup Long green onion Steps Cut the root so they are about 3cm in length Put roots in cup Immerse root in fresh water Long green onion grow in a few days Change water every other day in winter time, change every day in summer
